Ingredients
600gbeef sirloin or flank
1 large bunchfresh coriander
1 large bunchfresh mint
1cucumber, thinly sliced
2shallots, thinly sliced
200gcherry tomatoes, halved
3 tbsplime juice
2 tbspfish sauce
1 tsphoney
2red chillis, sliced
1 tspsesame oil
Instructions

Grill or pan-sear beef over high heat 3-4 minutes each side for medium rare.

Rest 5 minutes then slice thinly against the grain.

Mix lime juice, fish sauce, honey, chilli and sesame oil into dressing.

Combine coriander, mint, cucumber, shallots and tomatoes.

Add sliced beef.

Pour dressing over and toss gently.

Taste and adjust dressing.

Serve immediately while beef is still warm.
