Eggs poached in a spiced tomato and pepper sauce — naturally paleo and packed with flavour. Simmering the tomato sauce until it's genuinely thick before adding the eggs stops them sinking and overcooking in a thin, runny base.

Ingredients
6eggs
400gcrushed tomatoes
2red peppers, diced
1large onion, diced
4 clovesgarlic, minced
1 tspground cumin
1 tspsmoked paprika
1 tspchilli flakes
3 tbspolive oil
1 handfulfresh parsley
Instructions

Heat olive oil, fry onion and peppers until soft.

Add garlic and all spices, cook 2 minutes.

Add tomatoes and simmer 15 minutes until thick.

Make 6 wells in the sauce.

Crack an egg into each well.

Cover and cook 6-8 minutes until whites are set but yolks runny.

Scatter with parsley.

Serve directly from the pan.
