Ingredients

1.5 lbeggs
2taro leaves
1/2 cupgreen beans
1 cuprice noodles
2 tbspannatto oil
2 tspsoy sauce
2 tspvinegar
2 tspcoconut milk
1 tbspolive oil
to tastesalt and black pepper

Instructions

Crack and whisk the eggs, season them, then braise until just set, about 4 minutes.

Add the taro leaves and green beans, cooking until softened, about 6 minutes.

Stir in the annatto oil, soy sauce, vinegar and coconut milk for 3 minutes.

Cook the rice noodles separately and drain.

Let everything simmer for about 12 minutes so the flavors meld.

Taste and adjust the seasoning.
