Ingredients
1kglarge potatoes, cut into thick fries
vegetable oilfor frying
300gfresh cheese curds
2 cupsbeef stock
1 tbspWorcestershire sauce
1 tbspbutter
1 tbspplain flour

Instructions

Soak fries in cold water 30 minutes. Dry well. First-fry at 150°C for 6 minutes. Rest.

Make gravy: melt butter, whisk in flour, add stock and Worcestershire. Simmer until thickened. Season.

Second-fry at 190°C until very crispy. Salt immediately.

Pour fries into a bowl. Scatter cheese curds over. Pour hot gravy generously on top.

Serve immediately so curds begin to melt slightly.
