Ingredients

1kglarge floury potatoes, cut into thick fries
vegetable oilfor frying
200gcheese curds
2 tbspbutter
2 tbspplain flour
2 cupsbeef stock
1 tspWorcestershire sauce
saltto taste

Instructions

Soak cut fries in cold water 30 minutes. Dry thoroughly.

Fry at 150°C for 5 minutes for the first fry. Drain and cool.

Make gravy: melt butter, whisk in flour and cook 1 minute. Gradually add stock and Worcestershire. Simmer until thick and glossy.

Fry chips again at 190°C for 3-4 minutes until deep golden. Drain and season with salt.

Pile into bowls, scatter over cheese curds and pour hot gravy over the top immediately.
