Nova Scotia Lobster Chowder

A luxurious Maritime chowder with fresh lobster, potato and cream. Adding the lobster meat only at the end and heating it gently keeps it tender instead of turning rubbery from prolonged simmering.

Ingredients

2lobster tails, cooked and chopped
300gwaxy potatoes, diced
200gbacon, diced
1onion, diced
3 stalkscelery, diced
2 cupsfish stock
1 1/2 cupsthickened cream
1 cupwhole milk
2 tbspbutter
2 tbspplain flour
fresh dill and chivesto serve
salt and pepperto taste

Instructions

Fry bacon until golden. Add onion and celery, cook 5 minutes.

Stir in butter and flour, cook 1 minute. Add stock and potatoes.

Simmer 15 minutes until potatoes are tender.

Stir in cream and milk. Add lobster and heat gently. Season.

Serve topped with fresh dill and chives.
