2kgbeef back ribs
2 tbspsmoked paprika
1 tbspbrown sugar
1 tbspgarlic powder
1 tsponion powder
1 tspground cumin
1 tspblack pepper
1 tspcayenne
300mlBBQ sauce
100mlapple cider vinegar
Instructions

Remove membrane from the back of ribs.

Mix all spices into a dry rub and coat ribs generously.

Refrigerate overnight.

Place ribs in a roasting tin with vinegar, cover tightly with foil.

Roast at 150C for 3 hours until tender.

Remove foil, brush generously with BBQ sauce.

Increase to 200C and roast 20 minutes until sticky and caramelised.

Rest 10 minutes, slice and serve with coleslaw and corn.
