Add the celery and potatoes and cook until they begin to soften, about 6 minutes.
Stir in the hot sauce, BBQ sauce, smoked paprika and brown sugar until everything is coated.
Reduce the heat, cover, and let it bake down for about 8 minutes until the sauce clings and the potatoes are tender.
Meanwhile, boil and mash the potatoes for serving.
Taste and adjust the heat level, then spoon the beef mixture over the mashed potatoes.
