1.5kgpork belly, skin scored deeply
4 clovesgarlic, minced
1 tspfennel seeds, ground
1 tspdried thyme
1 tspsmoked paprika
2 tspsalt
4apples, cored and halved
1 tbsphoney
olive oilfor rubbing
Instructions

Score pork skin deeply, pat completely dry.

Mix garlic, fennel, thyme, paprika and salt into a paste.

Rub paste into the flesh side only, not the skin.

Rub skin with olive oil and extra sea salt.

Roast at 220C for 30 minutes to blister the skin.

Reduce to 160C and roast 1.5 hours until very tender.

Add apple halves and honey to the tray in the last 30 minutes.

Rest 15 minutes and serve with roasted apples.
