Ingredients
1kglamb shoulder, diced
3carrots, cut in chunks
3parsnips, cut in chunks
2turnips, quartered
1large onion, diced
4 clovesgarlic, minced
400mlbeef or lamb stock
2 sprigsfresh rosemary
3 sprigsfresh thyme
3 tbspolive oil
1 handfulfresh parsley
Instructions

Brown lamb in batches in olive oil, set aside.

Fry onion until golden, add garlic.

Return lamb, add stock, rosemary and thyme.

Bring to boil, reduce and simmer covered 1 hour.

Add carrots, parsnips and turnips.

Cook 40 more minutes until very tender.

Season generously.

Scatter with parsley and serve.
