
Grilled Whole Fish
A whole snapper or sea bass grilled with lemon, herbs and olive oil — pure and simple paleo cooking. Scoring the fish deeply on both sides is what lets the heat and flavour actually reach the thickest part.

Instructions
Score fish deeply on both sides.
Season inside and out with salt and pepper.
Stuff the cavity with lemon slices, herbs and garlic.
Rub outside with olive oil.
Grill over medium-high heat or under oven grill.
Cook 8 minutes each side until skin is charred and fish is cooked through.
Rest 3 minutes.
Serve with extra lemon and a simple green salad.
