Ingredients
4salmon fillets, skin on
2ripe avocados, diced
2ripe tomatoes, diced
1red onion, finely diced
1jalapeno, minced
3 tbsplime juice
1 handfulfresh coriander
2 tbspolive oil
1 tspsalt and black pepper
Instructions

Mix avocado, tomatoes, onion, jalapeno, lime juice and coriander into salsa.

Season and rest 15 minutes.

Pat salmon dry and season generously.

Heat olive oil in a pan over high heat.

Cook salmon skin side down 4 minutes until skin is crispy.

Flip and cook 2 more minutes for medium.

Rest 2 minutes.

Serve with avocado salsa spooned generously over.
