Juicy beef and pork meatballs bound with almond flour and herbs, simmered in a rich tomato sauce. Browning the meatballs in batches before they go into the sauce is what develops a caramelised crust on the outside, rather than boiling them pale straight in the tomato.

Ingredients
400gbeef mince
200gpork mince
50galmond flour
2eggs
3 clovesgarlic, minced
1 handfulfresh parsley, minced
1 tspdried oregano
1 tspsalt
800gcrushed tomatoes
1onion, diced
3 tbspolive oil
Instructions

Mix both minces with almond flour, eggs, garlic, parsley, oregano and salt.

Shape into golf ball-sized meatballs.

Brown meatballs in olive oil in batches, set aside.

Fry onion in same pan, add crushed tomatoes.

Simmer sauce 10 minutes.

Add meatballs to sauce.

Simmer covered 20 minutes.

Serve with zucchini noodles or cauliflower rice.
