Paleo Tuna Nicoise

A grain-free version of the classic Nicoise, built on fresh seared tuna, green beans and a sharp anchovy dressing. Searing the tuna for just ninety seconds a side is what keeps the centre properly pink and tender, rather than cooking it through to a dry, grey block.

Ingredients

400gfresh tuna steaks
200ggreen beans, blanched
4eggs, soft boiled
200gcherry tomatoes, halved
100gkalamata olives
1cucumber, sliced
4anchovy fillets
1 tbspDijon mustard
3 tbspred wine vinegar
100mlolive oil
1 clovegarlic, minced

Instructions

Sear tuna in a hot pan 90 seconds each side — keep it pink inside.

Blend anchovies, mustard, vinegar, garlic and olive oil into dressing.

Arrange green beans, tomatoes, olives and cucumber on a platter.

Slice tuna and arrange over salad.

Halve soft-boiled eggs and place around the platter.

Drizzle dressing generously over everything.

Season with salt and pepper.

Serve immediately.
