Malaysian fusion fried rice built on laksa paste, with prawns, egg and crispy shallots. Stir-frying the laksa paste alone in hot oil for a minute before the prawns go in is what toasts its spices, carrying that flavour through the rest of the rice as it fries.

1 cupbeansprouts
3spring onions, sliced
3 tbspcoconut milk

Stir-fry laksa paste in hot oil 1 minute.

Add prawns. Cook 2 minutes.

Add cold rice. Toss.

Push to side. Scramble eggs.

Add coconut milk and fish sauce.
