Malaysian fusion fried rice built on laksa paste, with prawns, egg and crispy shallots. Stir-frying the laksa paste alone in hot oil for a minute before the prawns go in is what toasts its spices, carrying that flavour through the rest of the rice as it fries.

Ingredients

600gcold cooked rice
300gprawns, peeled
3 tbsplaksa paste
2eggs
1 cupbeansprouts
3spring onions, sliced
3 tbspcoconut milk
fish sauceto taste
3 tbspvegetable oil
crispy fried shallotsto garnish
fresh laksa leafto serve

Instructions

Stir-fry laksa paste in hot oil 1 minute.

Add prawns. Cook 2 minutes.

Add cold rice. Toss.

Push to side. Scramble eggs.

Add coconut milk and fish sauce.

Add beansprouts and spring onion.

Toss everything together.

Serve topped with crispy shallots and laksa leaf.
