
Tahini Noodles
Cold sesame tahini noodles with cucumber, spring onion and crispy chilli. Rinsing the cooked noodles in cold water and draining them well stops them cooking further and washes off excess starch, so they don't clump once tossed in the sauce.

400gwheat noodles or ramen noodles
1cucumber, julienned
4spring onions, sliced
4 tbsptahini
3 tbspsoy sauce
2 tbsprice vinegar
1 tbspsesame oil
1 tbspchilli oil
1 clovegarlic, minced
1 tspsugar
sesame seedsto garnish
Instructions

Cook noodles. Rinse in cold water. Drain well.

Whisk tahini, soy, vinegar, sesame oil, chilli oil, garlic and sugar.

Thin with 2–3 tbsp water.

Toss noodles in sauce.

Serve with cucumber, spring onion and sesame seeds.
