1 lbskirt steak, seasoned and grilled, sliced
1bell pepper, sautéed
½onion, caramelised
2 cupscheddar and Monterey Jack blend, shredded
4large flour tortillas

Instructions

Fill the tortillas with sliced steak, sautéed peppers, caramelised onion and both cheeses.

Spread the filling evenly over one half of each tortilla.

Fold and griddle in oil over medium heat for about 3 minutes per side, until golden and the cheese has fully melted.
