500gpotatoes, boiled and riced
2 tbspbutter
2 tbspcream
1/2 tspsalt
150gplain flour
Instructions

While potatoes are still warm, mix with butter, cream and salt. Cool completely.

Work in flour until a soft dough forms.

Divide into balls, roll paper-thin on a floured board.

Cook on a dry griddle over medium heat 1–2 minutes per side until lightly blistered.

Serve with butter, or rolled around smoked salmon and cream cheese.
