
Jiggs Dinner
A traditional Newfoundland boiled dinner of salt beef simmered slowly with root vegetables and cabbage. Simmering the salt beef alone for a full ninety minutes before the vegetables go in is what tenderises the meat fully without turning the vegetables to mush.

Ingredients
700gsalt beef, soaked overnight in cold water
4medium potatoes, peeled
3carrots, peeled
1small turnip, peeled and quartered
1/4small cabbage, quartered
2parsnips, peeled
salt and pepperto taste
mustard picklesto serve
Instructions

Place salt beef in a large pot. Cover with cold water. Bring to a boil and simmer 1.5 hours.

Add potatoes, carrots, turnip and parsnips.

Cook 20 minutes. Add cabbage.

Cook 15 more minutes.

Serve everything together with mustard pickles and pease pudding.
