
Cranachan
A traditional Scottish dessert of toasted oats, whisky cream and fresh raspberries. Toasting the oats in a dry pan until properly golden gives cranachan its nutty flavour and crunch, rather than the raw, floury taste plain oats would bring.

Instructions
Toast oats in a dry pan until golden. Cool.
Whip cream to soft peaks. Fold in honey and whisky.
Reserve some raspberries for garnish. Crush remaining gently.
Layer whipped cream, oats and raspberries in glasses.
Scatter reserved raspberries over top and drizzle with extra honey.
