900gcaster sugar
150mlwhole milk
150mlwater
100gunsalted butter
1 tincondensed milk (395g)
1 tspvanilla extract
Instructions

Heat sugar, milk and water, stirring until dissolved.

Add butter and condensed milk. Bring to a boil.

Stir constantly over medium heat until the mixture reaches 118°C (soft ball stage) — about 20 minutes.

Remove from heat. Add vanilla. Beat with a wooden spoon until the mixture thickens and becomes grainy.

Pour into a buttered tin. Cool until firm, then cut into squares.
