Ingredients

500gplain flour for pastry
250gcold butter, cubed
cold waterto bind
500gmixed dried fruit
100gmixed peel
3/4 cupplain flour
1/4 cupbrown sugar
1 tspmixed spice
2 tspground ginger
1 tspcinnamon
1/2 tspblack pepper
1 tspbicarbonate of soda
1egg
1/2 cupwhisky or milk

Instructions

Make pastry: rub butter into flour. Add water. Chill.

Mix dried fruit, peel, flour, sugar, spices, bicarb, egg and whisky.

Roll two-thirds of pastry into a rectangle. Line a loaf tin. Fill with fruit mixture.

Top with remaining pastry. Crimp and seal. Prick top all over.

Bake at 180°C for 2 hours.
