Slow-cooked New England baked beans with salt pork, molasses and brown sugar. Removing the lid for the final hour of baking lets the liquid reduce down and thicken around the beans instead of staying thin and soupy.

500gdried navy beans, soaked overnight
200gsalt pork or thick bacon, diced
1large onion, diced
3 tbspmolasses or treacle
2 tbspbrown sugar
2 tbspketchup
1 tspdry mustard
1 tspWorcestershire sauce
2 cupswater
salt and pepperto taste

Parboil soaked beans 30 minutes. Drain.

Mix beans with remaining ingredients in a covered casserole.

Bake at 150°C for 4-5 hours, checking every hour and adding water if dry.

Remove lid for the last hour to thicken.
