1 cupricotta cheese
3/4 cupplain flour
2 tspbaking powder
3 tbspcaster sugar
pinchsalt
3eggs, separated
1/2 cupmilk

Whisk ricotta, egg yolks, milk, sugar and salt until smooth.

Fold in flour and baking powder.

Beat egg whites to stiff peaks and fold gently into the batter in two additions.

Melt butter in a non-stick pan over medium heat. Cook 1/4 cup portions for 2 minutes each side.
