Vegan Jackfruit Pulled Pork

Slow-cooked jackfruit in smoky BBQ sauce — shredded and served in brioche buns with coleslaw. Frying the seasoned jackfruit over high heat until genuinely caramelised, before the BBQ sauce ever goes in, gives it a savoury depth closer to real pulled pork than plain steamed jackfruit.

Ingredients

800gcanned young jackfruit, drained and shredded
200mlBBQ sauce
1 tbspsmoked paprika
1 tspgarlic powder
1 tsponion powder
1 tspground cumin
3 tbspvegetable oil
4vegan brioche buns
vegan coleslaw and picklesto serve

Instructions

Season shredded jackfruit with paprika, garlic powder, onion powder and cumin.

Fry in oil over high heat until caramelised and slightly crispy.

Add BBQ sauce and stir to coat.

Cook 5 minutes until sauce thickens and jackfruit is very well coated.

Use two forks to shred further into pulled texture.

Toast vegan brioche buns cut side down in a pan.

Pile jackfruit generously into buns.

Top with coleslaw and pickles. Serve immediately.
