Ingredients

2 cupsplain flour
3/4 cupcaster sugar
2 tspbaking powder
1/2 tspsalt
1/2 cupunsalted butter, melted
2eggs
3/4 cupwhole milk
1 tspvanilla extract
1 1/2 cupsfresh blueberries
2 tbspraw sugar for topping

Instructions

Preheat oven to 190°C. Line a 12-hole muffin tin.

Whisk flour, caster sugar, baking powder and salt.

Whisk melted butter, eggs, milk and vanilla together.

Fold wet into dry until just combined. Gently fold in blueberries.

Divide batter among holes and sprinkle with raw sugar.

Bake 20-22 minutes until a skewer comes out clean. Cool 5 minutes before serving.
