
Canadian Flapper Pie
A classic Canadian Prairie custard pie set in a graham cracker crust and topped with meringue. Pouring the hot milk gradually over the whisked egg yolks while stirring constantly is what tempers them safely, preventing the eggs from scrambling before the custard thickens on the stove.

Mix crumbs, melted butter and sugar. Press into a pie dish. Bake at 180°C for 8 minutes.
Whisk yolks, sugar and cornflour. Heat milk until steaming, pour over yolk mixture whisking constantly. Return to heat, stir until thickened.
Stir in vanilla. Pour into crust. Cool.
Beat egg whites to stiff peaks with caster sugar to make meringue. Pile onto pie.
Bake at 180°C for 10 minutes until meringue is golden.
