A quick Australian pan-fried white fish in a simple lemon butter sauce. Dusting the fish lightly in flour before it hits the pan helps it brown properly and leaves just enough starch behind to lightly thicken the lemon butter sauce.

4white fish fillets (snapper, barramundi or flathead)
salt and pepperto season
2 tbspplain flour for dusting
3 tbspbutter
2 tbspolive oil
3 clovesgarlic, minced
juice of 2lemons
3 tbspfresh parsley, chopped
steamed greens and riceto serve
Instructions

Season and dust fish with flour.

Fry in butter and oil 3-4 minutes per side until golden.

Remove fish.

Add garlic to pan. Cook 30 seconds. Add lemon juice and parsley.

Pour sauce over fish. Serve with greens.
