2large cauliflower heads, cut into 2cm steaks
3 tbspolive oil
1 tspsmoked paprika
1 tspcumin
salt and pepperto taste
1 bunchparsley
1 bunchcoriander
4 clovesgarlic
3 tbspred wine vinegar
6 tbspolive oil for chimichurri
1red chilli
Instructions

Brush cauliflower steaks with olive oil, paprika and cumin.

Roast at 220°C for 20–25 minutes until golden and tender.

Make chimichurri: finely chop herbs, garlic and chilli. Mix with vinegar and olive oil.

Spoon chimichurri generously over hot cauliflower steaks.

Serve with crusty bread or grains.
