A thick, sweet American corn chowder with potato and a touch of cream. Scraping the corn cobs after cutting off the kernels releases their milky liquid into the pot, adding a layer of sweet corn flavour a lesser chowder would miss.

Ingredients
6ears of corn (or 4 cups frozen kernels)
4medium potatoes, diced
1large onion, diced
4 stalkscelery, diced
3 clovesgarlic, minced
4 tbspbutter
1/4 cupplain flour
4 cupsvegetable stock
1 cupcream
1 cupwhole milk
fresh chives and hot sauceto serve
salt and pepperto taste

Cut corn kernels from cobs. Scrape cobs for milk.

Melt butter. Sauté onion, celery and garlic until soft. Add flour.

Add stock and potato. Simmer 15 minutes.

Add corn, cream and milk. Simmer 10 more minutes.

Season. Serve with chives and hot sauce.
