Caramelise sugar in a wok until dark amber.

Add garlic and ginger, sauté briefly.

Add pork, stir to coat in caramel.

Add fish sauce and coconut water.

Simmer covered on low heat 40 minutes until pork is very tender and sauce is thick.

Garnish with spring onions and chilli. Serve with rice.
