Vietnamese Caramel Ginger Pork

Sweet, sticky pork braised in a dark caramel with ginger — served with steamed rice. Cooking the sugar all the way to a dark amber before the pork goes in gives this dish its distinctive bittersweet depth, rather than tasting simply sugary.

Ingredients

600gpork belly, cubed
3 tbspsugar
3 tbspfish sauce
3cmginger, julienned
2 clovesgarlic, minced
100mlcoconut water
spring onionsto garnish
chillioptional

Instructions

Caramelise sugar in a wok until dark amber.

Add garlic and ginger, sauté briefly.

Add pork, stir to coat in caramel.

Add fish sauce and coconut water.

Simmer covered on low heat 40 minutes until pork is very tender and sauce is thick.

Garnish with spring onions and chilli. Serve with rice.
