Ingredients

1.5kgpork shoulder, bone in
2 tbspsmoked paprika
1 tbspgarlic powder
1 tspground cumin
1 tspcayenne pepper
1 tspblack pepper
200mlapple cider vinegar
1 headiceberg lettuce, leaves separated
paleo coleslawto serve
hot sauceto serve

Instructions

Mix all spices into a rub.

Coat pork shoulder thoroughly.

Place in a roasting tin with apple cider vinegar.

Cover tightly with foil and roast at 150C for 6 hours.

Rest 30 minutes then pull apart with two forks.

Arrange lettuce cups on a board.

Fill each cup with pulled pork.

Top with paleo coleslaw and hot sauce.
