Beef Bone Broth

A deeply nourishing beef bone broth slow-cooked for hours — the foundation of paleo cooking. Roasting the bones until deeply browned before they go in the pot gives the broth its rich colour and roasted depth instead of tasting flat and thin.

Ingredients

2kgbeef bones including knuckle and marrow
2carrots, roughly chopped
3 stalkscelery, roughly chopped
1large onion, halved
4 clovesgarlic
2 tbspapple cider vinegar
2bay leaves
1 tspblack peppercorns
3Lcold water

Instructions

Roast bones at 200C for 30 minutes until browned.

Transfer bones to a large pot with all vegetables and peppercorns.

Add apple cider vinegar and cold water.

Bring slowly to boil, skim thoroughly.

Add bay leaves and reduce to the lowest simmer.

Simmer uncovered 12-24 hours — the longer the better.

Strain through a fine sieve.

Cool, skim fat and store. Drink as broth or use as stock.
