
Wild Rice with Mushroom and Cranberry
A festive Canadian wild rice dish with earthy mushrooms and tart cranberries. Cooking the wild rice and white rice separately, since wild rice takes three times as long, stops one turning to mush while the other stays underdone.

1 cupwild rice
1 cuplong-grain white rice
3 cupsvegetable stock
300gmixed mushrooms, sliced
1large onion, diced
3 clovesgarlic, minced
1/2 cupdried cranberries
1/3 cuppecans, toasted
3 tbspbutter
fresh thymeto garnish
salt and pepperto taste

Cook wild rice in 2 cups stock for 45 minutes. Cook white rice in 1 cup stock for 15 minutes.

Sauté onion and garlic in butter 5 minutes. Add mushrooms. Cook until golden.

Combine both rices with mushroom mixture.

Stir in cranberries and pecans. Season.

Serve garnished with fresh thyme.
