
Loaded Baked Potato
A giant baked potato loaded with sour cream, cheddar, bacon and chives — a meal in itself. Baking the potato directly on the oven rack rather than a tray lets hot air circulate all the way around, giving the skin its properly crisp finish.

Scrub potatoes, prick all over with a fork.
Rub with oil and salt, bake directly on oven rack at 200C for 1 hour.
Potatoes are done when a knife slides in easily.
Cut a deep cross in each potato and squeeze gently to open.
Add a generous knob of butter inside each potato.
Top with sour cream and grated cheddar.
Scatter with crumbled bacon and spring onions.
Serve immediately while steaming hot.
