Roasted beef marrow bones served with a small spoon — pure rich fat and collagen in every bite. Watching for the marrow to just start bubbling at the edges is the cue to pull it from the oven before it melts away entirely.

Instructions
Place marrow bones cut side up on a baking tray.
Season with salt and pepper.
Roast at 230C for 15-18 minutes.
The marrow should be soft and jiggly but not melted away.
It is done when the marrow starts to bubble at the edges.
Remove from oven and rest 2 minutes.
Serve immediately with a small spoon to scoop the marrow.
Season with flaky salt as you eat.
