A rich, creamy New England lobster bisque with brandy, tarragon and cream — elegant and luxurious. Roasting the lobster shells until deeply red before they go into the pot extracts their maximum flavour into the finished bisque.

Ingredients

600gcooked lobster meat
lobster shellsfrom the lobster
1onion, diced
2 stalkscelery, diced
1carrot, diced
4 clovesgarlic, minced
3 tbspbrandy
400gcrushed tomatoes
500mlfish stock
400mldouble cream
3 tbspbutter
1 handfulfresh tarragon

Instructions

Roast lobster shells at 200C for 15 minutes until red.

Fry onion, celery and carrot in butter until soft, add garlic.

Add brandy and carefully ignite or cook off.

Add tomatoes, stock and roasted shells.

Simmer 30 minutes, strain through a fine sieve pressing shells.

Return strained bisque to pot, add cream.

Simmer 10 minutes until slightly thickened.

Add lobster meat, heat through, scatter with tarragon and serve.
