300gthin wheat noodles or soba
1cucumber, julienned
2hard-boiled eggs, halved
100gkimchi, roughly chopped
4 tbspgochujang
2 tbspsesame oil
2 tbsprice vinegar
1 tbspsoy sauce
1 tbspsugar
2 clovesgarlic, minced
3 tbspsesame seeds
4spring onions, sliced
Instructions

Cook noodles until just done, rinse under cold water until completely cold.

Whisk gochujang, sesame oil, vinegar, soy, sugar and garlic into a dressing.

Toss cold noodles with dressing until well coated.

Divide between bowls, top with cucumber, kimchi and egg.

Scatter with spring onions and sesame seeds.
