Ingredients
400gsilken tofu, cut in cubes
4 tbsppotato starch or cornflour
600mldashi stock
3 tbspmirin
3 tbspsoy sauce
1 tspsugar
500mlvegetable oil for frying
2cmfresh ginger, grated
4spring onions, finely sliced
2 tbspbonito flakes, optional
Instructions

Pat tofu cubes very dry with paper towel.

Combine dashi, mirin, soy and sugar in a small pan, bring to a simmer.

Heat oil to 180C.

Dust tofu cubes in potato starch, shaking off excess.

Fry tofu in batches 2-3 minutes until pale golden and crisp.

Divide between serving bowls, ladle hot broth around the tofu.

Top with ginger, spring onions and bonito flakes if using.
