300ggreen papaya, shredded
2long red chillies
2 clovesgarlic
2 tbsppadaek or fish sauce
2 tbsplime juice
1 tspsugar
2tomatoes, halved
dried shrimp2 tbsp

Instructions

Pound chillies and garlic to a rough paste in a mortar.

Add padaek, lime and sugar. Mix.

Add papaya, dried shrimp and tomatoes. Pound and toss — not too smooth.

Taste — should be sour, salty, spicy and slightly pungent.
