The original Toll House-inspired crisp-edged, soft-centred chocolate chip cookie. Pulling the cookies from the oven while the centres still look slightly underdone gives them their soft, chewy middle once they finish setting on the tray.

1 tspbicarbonate of soda
1 tspsalt
230gunsalted butter, at room temperature
200gcaster sugar
200gbrown sugar
2eggs
2 tspvanilla extract
350gchocolate chips

Beat butter and both sugars until pale and fluffy.

Beat in eggs and vanilla.

Mix in flour, bicarb and salt until just combined.

Fold in chocolate chips.

Chill dough 30 minutes. Drop by rounded tablespoons onto lined trays. Bake at 190°C for 9-11 minutes — centres should look underdone. Cool on tray.
