Brown the chicken thighs well on both sides in a hot pan, then remove and set aside.
This browning builds most of the flavour of the dish, so do not skip it.
In the same pan, saute the onion until soft, stir in the paprika and cook briefly until fragrant, then return the chicken and simmer, covered, for 30 minutes until tender.
Remove the pan from the heat before stirring in the sour cream, so the sauce stays smooth rather than splitting. Serve over noodles or dumplings.
