
Mashed Potatoes
The ultimate creamy American mashed potatoes with butter, cream and chives, silky and indulgent. Steaming the drained potatoes dry for a couple of minutes before mashing stops the finished mash turning watery.

Instructions
Boil potatoes in well-salted water until very tender, about 20 minutes.
Drain completely and return to pot over low heat to steam dry for 2 minutes.
Rice or mash potatoes until completely smooth — no lumps.
Add butter and beat in vigorously.
Add warm cream gradually, beating until silky.
Season generously with salt and white pepper.
Taste and adjust butter and seasoning.
Serve topped with chives and an extra knob of butter.
