4pork cutlets, pounded thin
2 cupsbreadcrumbs
4lemon wedges to serve
2 / 1/2 cupegg and flour for coating

Coat the cutlets in flour first, shaking off the excess, then dip in beaten egg.

Press the egg-coated cutlets firmly into the breadcrumbs so the coating sticks properly all over.

Fry in a generous amount of oil until deep golden, about 3-4 minutes per side, without moving them too much so the crumb sets into a crust.

Serve immediately with just a squeeze of lemon, schnitzel loses its crispness fast, so it is best eaten straight from the pan.
