Classic British steamed golden syrup sponge, light, fluffy and swimming in syrup sauce. Tying the foil lid loosely rather than tight gives the sponge room to rise as it steams instead of getting compressed.

4 tbspgolden syrup plus extra for top
125gunsalted butter, softened
125gcaster sugar
2large eggs
125gself-raising flour
2 tbspwhole milk
1 tspvanilla
custard or creamto serve
Instructions

Butter a 1-litre pudding basin; pour golden syrup in base.

Beat butter and sugar until pale; beat in eggs one at a time.

Fold in flour; stir in milk and vanilla.

Spoon over syrup in basin; cover with buttered foil (tied with string).

Steam over simmering water for 1½ hours. Turn out; serve with custard.
