A traditional British currant suet pudding, steamed until tender. Covering the basin tightly, with room for the pudding to expand, stops it turning dense or waterlogged during the long steam.

Ingredients

1 1/2 cupsplain flour
1/2 cupsuet
1/2 cupcaster sugar
1 tspbaking powder
1 cupcurrants
zest of 1lemon
2 tbspgolden syrup
3/4 cupwhole milk
custardto serve

Instructions

Mix flour, suet, sugar, baking powder, currants and lemon zest.

Add golden syrup and milk. Mix to a soft dough.

Pour into a buttered pudding basin. Cover tightly with foil.

Steam for 1.5 hours.

Unmould and serve with hot custard.
