300gbuckwheat groats
30gdried porcini mushrooms
2onions, diced
3 tbspbutter or oil
2 clovesgarlic, minced
600mlmushroom soaking liquid topped up with water
salt and pepperto taste

Soak porcini in 600ml hot water 20 minutes. Drain, reserving liquid. Chop mushrooms.

Toast buckwheat in a dry pan 3 minutes until fragrant.

Fry onion in butter until golden. Add garlic and chopped mushrooms.

Add buckwheat and mushroom liquid. Season. Cover and cook 15 minutes until liquid absorbed.

Rest 5 minutes. Fluff with a fork. Serve scattered with dill.
