700gbeef sirloin, thinly sliced
400gmushrooms, sliced
1large onion, thinly sliced
3 clovesgarlic, minced
2 cupsbeef stock
1 cupsour cream
2 tbspDijon mustard
3 tbspbutter
2 tbspplain flour
salt and pepperto taste
400gegg noodles, cooked
fresh parsleyto serve
Instructions

Season beef. Sear quickly in batches in hot butter — do not overcook. Remove and set aside.

Sauté onion, mushrooms and garlic in the same pan 8 minutes.

Stir in flour and cook 1 minute. Add stock and mustard. Simmer 5 minutes.

Remove from heat. Stir in sour cream. Return beef and heat gently.

Serve over egg noodles garnished with parsley.
