Thin-shaved beef steak with sautéed peppers and onions, smothered in provolone on a hoagie roll. Caramelising the onions and peppers first and pushing them aside before the beef hits the griddle keeps both properly browned.

600gbeef sirloin, very thinly shaved
2green capsicums, thinly sliced
2onions, thinly sliced
150gprovolone or American cheese, sliced
4hoagie rolls, split
2 tbspvegetable oil
salt and pepperto taste
Instructions

Heat oil in a large griddle or frying pan over high heat.

Cook onions and capsicums until well caramelised, about 12 minutes. Push to the side.

Cook beef in the hot pan for 2-3 minutes, breaking into chunks. Season.

Mix beef with vegetables on the griddle.

Lay cheese over the top and allow to melt. Pile into rolls immediately.
