700gbeef mince
1large onion, diced
1green capsicum, diced
4 clovesgarlic, minced
2 cansdiced tomatoes
1 canred kidney beans, drained
1 canblack beans, drained
2 tbsptomato paste
2 tbspchilli powder
1 tspcumin
1 tsporegano
1 tspsmoked paprika
2 tbspolive oil
salt and pepperto taste
sour cream, cheese and spring onionto serve
Instructions

Brown beef mince in batches in oil. Remove and set aside.

Sauté onion and capsicum 5 minutes. Add garlic and all spices, cook 1 minute.

Add tomato paste, tomatoes, both beans and beef. Stir well.

Simmer uncovered 40 minutes, stirring occasionally, until thick and rich. Season.

Serve topped with sour cream, grated cheese and spring onion.
